Job Procedure/Description

Cook

Swipe In

Wash Hands

Prepare all breakfast items to insure they are ready to be served in proper temp 15 minutes before serving

Monitor trayline

Get 1st choice started

Cook and puree/grind lunch 1st/2nd choice as needed

Slice meat as needed for 1st/2nd choice

Put puree items in cooks refrigerator

Perform Manager checks as needed

Insure all food is prepared for residents to proper temp and also retail restaurant

Stock hot line record temperatures

Maintain foods/batch cook as needed

Cool any cooked meats for next day record in cooling log

Insure communication with line is done to insure there no runouts and food is prepared for call down.

Clean up

Check trayline leftovers cool/discard as needed record accordingly

Empty hot holding cabinet - cool/discard as needed record accordingly

Change pans in hot holding cabinet daily

Review menu for next two days

Review breakfast counts

Report any concerns to manager

Return Keys

Sanitation

Clean and maintain area as needed

Maintain all records

Take break and meal period as scheduled
